Baked Pickle Chips

My daughter came over the other day with this dish of baked pickle chips. They  were so yummy I asked her for the recipe she used and I had to share it with you.

Baked Pickle Chips

She said the trick was to use panko bread crumbs. They give the pickles a big crunch and bake up to a golden brown.  We used ranch dressing for dipping but I think Chipolte sauce would be great too.

Ingredients: 

  • One small jar of dill pickle chips
  • Panko bread crumbs
  • 2 eggs
  • 1 cup milk
  • Sea salt and fresh cracked pepper

Directions: 

  • Preheat the oven to 415 degrees
  • Line a cookie sheet with aluminium foil and spray with non-stick cooking spray
  • Mix the egg and milk together in a separate bowl
  • Drain the pickles with a strainer and add them to the egg/milk mixture
  • Place the panko in a deep bowl
  • Dip the pickles in the panko. Flip them until they have a good coating, then place on the cookie sheet
  • Bake for 20 minutes or until the panko turns golden brown
